A decade past its zenith as the vanguard of bistronomy, Iñaki Aizpitarte's flagship remains structurally sound but spiritually exhausted. The tasting menu, now €95, featured a brilliant cuttlefish with burnt onion, followed immediately by a lamb dish entirely devoid of seasoning. The natural wine pairing felt less curated than randomly assembled from a surplus.
Verdict:
Skip the tasting menu, order à la carte at the bar.
